This smoothie bowl is pretty unique, and makes a delicious fall breakfast or snack. Looking through the ingredients, you might think some of the combos are a bit odd, but I swear by them… let me explain.
First, the banana and cauliflower make the base of the smoothie. Banana is naturally a super sweet and relatively bland fruit. Cauliflower is also very bland, but loaded with healthy vitamins. It also gives a fluffy volume and texture to your smoothies. The mango adds some color, citrus, and sweetness.
Turmeric is an Indian spice and part of the ginger family. In contrast to ginger though, turmeric has a warmer flavor and a beautiful bright orange color. If you’re a fan of “golden milk” (which is made with turmeric, you will certainly love this. If you don’t know what that is, that is ok- give this a try anyways, you are sure to love it.
1 ripe banana sliced (& frozen if possible)*
1 cup frozen cauliflower
1/2 cup frozen mango**
2 Tbsp. raw cashews***
2 Tbsp. dried coconut
1/2 Tbsp. organic raw honey
1 Tbsp. maca powder (I like this kind)
2 tsp. turmeric (This brand is good)
1 tsp. ginger
1 tsp. vanilla
1/2 cup almond milk (or your favorite milk) + more as needed
(optional for topping) chia seeds, hemp seeds, banana chips, extra shredded coconut, sliced berries, chopped nuts
*Never waste your bananas! When they get too ripe and mushy, slice them and throw them in a ziplock. I keep an ongoing stash in my freezer and never shy away from purchasing large quantities at the store or farmers market.
**The mango can be left out for a less “tropical” flavor, but I definitely recommend leaving it in. If you don’t have mango, frozen pineapple or peaches are good substitutes
***Raw cashews can sometimes be hard to find. I recommend ordering them online (link above) or buying them at Trader Joe's. While you can use regular, roasted cashews, raw cashews really make your smoothie a bit richer and creamier.
