Yesterday, as I threw the ingredients for this smoothie in the blender, I confessed to my sister that not so long ago I downed 3 smoothies in 1 day. (...addictions...) They were each a little different-so that makes it ok right?
Seriously though. Smoothies are amazing—super easy and super refreshing! I love all the variations and pretty colors that they can make. I got a Vitamix for Christmas this year and I can’t stop experimenting!
This recipe is one of my favorites thus far. I love the combo of blueberries and nut butter. It is naturally sweetened by the banana, nutrient dense from the kale, and extra protein packed with the chia seed. Who knew 6 ingredients could make such a wonderful thing?

Mermaid Smoothie Bowl:
1/4 c. Frozen Blueberries
1 Frozen Banana*
1/2 c. Frozen Kale**
2/3 c. Almond Milk
1/2 tbs. Almond Butter
1/2 tbs. Chia Seed
Toppings (optional):
Fresh Blueberries
Granola
Crushed Almonds
Extra Chia seed
Hemp Seed
Throw all your ingredients in a blender or food processor. Blend until smooth but be careful not to over-mix. Add extra almond milk if your smoothie is having trouble blending. Pour into a bowl and layer on your choice of topping. Serve immediately & enjoy!

*Freeze your super ripe (brown) bananas in ziplock bags in your freezer. I literally keep a stash. Bananas are super cheep and they never go to waste when I do this.
**Same with Kale. Many times its cheeper to buy a big bag of fresh kale and freeze it- than look for a little bag in the frozen food section at the grocery store. Also, if you don’t have any frozen- not a big deal. Throw it in fresh!
